1. Don't forget to indicate your name, especially while blogging under "Anonymous" . Also indicate the Recipe's name while posting your comments, suggestions and queries in the box below
2. Gayatri Vantillu is an e- extension of my home where I respect each and every visitor - Big & Small, Young & Old. I express it through addressing my visitors with a traditional suffix of "Garu" / "Ji" or a prefix of Shri / Smt . For people who are not from Indian sub-continent and not familiar with Indian salutations, I prefer a prefix Mr. / Mrs. / Ms etc. I expect and insist for a similar reciprocal gesture from all my visitors.

Gayatri garu,
ReplyDeleteThis is with reference to DABBAKAYA RASAM. It is OK. But in Andhra houses DABBAKAYA is used mostly for preparing pachchadi (chutney), or for pickle. Generally lemon juice is made and more liked, like nimma rasam kharam, nimmakaya uragaya. koorala loki, majjiga loki nimmarasam vadutaru. Dabbakayanu nippula paina pokkinchi bellam,Mirapakayalu, vesi tiraga motha to pahchadi chestaru. Adi mee A to z recipes lo ledu. Please include that also.
I only heard of this recipe. I haven't tasted it yet

Dear Gayatriji:
ReplyDeleteI am very impressed by your method of explaining recipes and cooking methods.
I am not a Telugu but used to love some Telugu food, and hence chanced upon your website. As luck would have it, my husband is now relocated to Hyderabad due to his work and I am really enjoying also getting familiar with the language and cuisine as well.
Great job. I have just one question, is all of Andhra Cuisine supposed to very spicy or is it possible to to be moderate or mild too ??? I feel so disappointed when I am a guest at people's homes or go to a restaurant, the dish is awsome but we just cannot consume much due to the spice. What is your suggestion ...
Priyamvadha
Priyamvadha Garu,
DeleteSpicing the curry is a personal choice. Less the spices, more would be the taste of the vegetable!!!

DeletePaneer will not remain fresh for long even if you keep it in refrigerator. But (Curdled mik)Chenna stays fresh in the fridge for longer periods. So store Chenna (along with whey water)in fridge and make Paneer as and when required. However it is advisable not to keep Chenna also for more than 3 days.

DeleteHi Gayatri Garu,
ReplyDeleteI am Prasanthi and I am newly married. Soon after getting married I had to shift to USA with my husband. I felt so nervous when I was cooking in the initial days of my married life here in US. Then I came to know about your website which is like a gift to me. I started watching your recipes and cook. Now I feel like cooking is not so hard as I thought. Its been 6 months since we got married and my husband is pretty much satisfied with my cooking :)
Thank you Gayatri Garu!!
For Vinayaka Chavithi I cooked 'Undrallu', 'Mixed Vegetable Rice' you posted in your site and my guest was pretty impressed with those recipes. In fact this was the first time I cooked undrallu and mixed vegetable rice.
Also I have read your weight reduction column and inspired and started dieting the way you said.

We prepared Vadu Manga pickle in March/April when they just came out. It was very good...then we went abroad and returned after six months. The pickle jar was in the fridge and except an occasional shake/stir by a friend, reamined as it was . We are back now...much of the water has dried out and the mangos themselves are not very tasty.
I remember my Grandma in the village used to do something with ths type of old pickle. Any suggestions, other than throw it away ?
Chitra
Chitra Garu,
DeleteMay be you can cook the mangoes to make dal!!!

ReplyDeletei have seen in karnataka pickle specially in mango pickle they use a kind of seeds which looks like chilli seeds( actually not chilli seds) but are very soft and silky can u guess what are they i am sure the are not khuskhus or in telugu gasgasalu

ReplyDeleteI have a small suggestion to make. While you have so many wonderful recipes on your pages already, I would suggest that you also think of coming up a section for "Patyam" vantalu for new moms or people who have undergone any surgeries or something like that. Dear Gayatri garu,
ReplyDeleteI have been watching your videos from last 2 years and have learnt a lot from you! I really appreciate for your time and patience for such a wonderful blog which is very easy to follow.
Now i'm pursuing Masters in US. The problem is, I dont get all the Indian vegetables in my area(I'm a vegetarian). How many dishes can i manage to cook with the same 4-5 vegetables (beans, carrot, peas, aloo, okra). And i dont like high calorie food like panner and oily food. Can you please suggest me some good, easy, quick and healthy recipes? That would be helpful. Thank you for your reply.
Akshata Garu,
DeleteThanks for the feedback. You can type the name of the vegetable in the search box on my website and find the relevant recipes.
You can also substitute cauliflower and potato for paneer and make all the paneer dishes too!!

Namasthe Gayathri garu,
ReplyDeleteThanks a ton for your wonderfull help in making cooking really interesting. In your Idli recipe you suggested to preheat oven at 40 degree Celcius. How much time do we need to heat it. I use oven only to prepare curd. Sorry for such a dumb question. My idli batter ferments occationally so soft idlis are rare.
Once again thanks for all your help
Kiranmayi
Kiranmayi Garu,
Deletewe preheat the oven to keep it warm inside. On reaching the temperature you may switch it off. It you are in colder regions set it 27-30 degrees and leave it till you remove the batter
Gayatri Gaaru,
ReplyDeleteI wanted to know if there is a way to preserve aavakaaya in such a way that it doesn't smell old after some time (like 10+ months).
I am guessing every one sees this problem (if not then I have a problem with my technique).
1. What causes this smell (for an old aavakaaya) which is quite unique? Is it the oil or chilli powder etc? This year it is not even 6 months since we made new aavakaaya and it is already smelling like old.
2. How to preserve it in such a way that it smells fresh for the whole year?
-ravikiran
(bangalore..but a telugu guy)
Ravikiran Garu,
DeleteIt is the oil which is responsible for the old smell. Rarely we get an opportunity to buy oil straight from the oil mill. Hence this smell is unavoidable. However while making pickles check the packing date and take the latest dated pack available.

DeleteGayatri garu,
ReplyDeleteYesterday I tried the stuffed capsicum curry. I wanted to cook something and do something different from my wife and kids after a long time. I accidentally came across your video on youtube. When I tried it, it came out really well.
The good thing I liked about your video is
1) The ingredients were all easily available ( luckily I had some paneer at home as well).
2) The instructions were simple.
Thanks for the recipe. God Bless.
- Ranganath V, California, USA.
My wife and kids also liked it very much. They really liked me cooking after a long time for them as well.
DeleteRanganath garu,
DeleteIndeed its a great guesture to cook occasionally for the family, by the male members!

hi gayatri
ReplyDeleteThis is tanuja, i want to try potlakaya curry as prepared by u. But in this you have boiled the pieces in micro oven.. wt should the others do, who are not having oven in the home...
Gayatri Garu
ReplyDeleteThere is a query regarding purchase of OTG. I m bit confused about Morphy Richards and Bajaj.
I want to buy 28 L Morphy but the problm with it is, its not having rotating fan inside, but same capacity bajaj is having the fan.
On the contrary Morphy 40L has the fan. Is 40L really required for a family of 4.
Mam pls suggest whether to buy 40L/28L/24L or Morphy/Bajaj. Is there any other brand u recommend, I m having IFB25sc3 convection microwave @ home.
Regards
Priya Kapoor
Priya garu,
DeletePersonaally I prefer 40 lts because you have a fan and enough working space. Technically we feel that the size is too big for a family of four, but the working comfort is more especially while making cookies. When there is a reasonable gap between the food and heating elements the baking results are better and easy to handle
